- A 250 g Époisses
- 1 thick slice of braised ham (200 g)
- 300 g of pie crust
- 3 eggs
- 15 cl of milk and 30 cl of cream
- 10 g of butter
- 1 medium apple
- Nutmeg, ground pepper..
Spread out the pie crust. Arrange it in a 25 to 30 cm pie pan, greased with butter and floured. Let stand 20 minutes.
During this time, dice the peeled apple and the ham.
Preheat the oven to 180 °C (level 6).
Remove the rind from the cheese then dice. Gently melt the cheese in a saucepan with the milk. Remove from the heat. Add the liquid cream, slightly beaten eggs, diced ham and apples, a pinch of nutmeg and pepper to taste.
Pour into the pie pan and bake for around 40 minutes.
Let cool a bit before serving with a green salad drizzled with walnut oil.
